Spanning a massive 40,000 square feet, AIR (which stands for Awareness, Impact, and Responsibility) is a forward-thinking culinary hub where food, design, and sustainability converge in a very cool way.
A New Approach to Fine Dining
Helmed by chefs Matthew Orlando and Will Goldfarb, AIR isn’t about following the traditional fine dining path. Instead, it offers a casual but impactful dining experience, where sustainability drives all aspects of their process, from ingredient sourcing to how the food is served.
Fermentation, Creativity, and Zero Waste
Fermentation and upcycling, are cornerstones of their philosophy. Ingredients that would typically go to waste are transformed like fish bones turned into crackers, or their Reincarnated Chocolate, a dessert made from cocoa husks and coffee cherry skins. The dishes they serve demonstrate how AIR takes the concept of zero waste and weaves it into an elevated, yet totally approachable dining experience.
Beyond the food, the space also reflects their commitment to sustainability. Recycled materials like timber and plastic bottles have been reimagined into furniture, and the restaurant’s open kitchen and terraces invite guests to witness the process behind every dish. The grounds also have an edible garden, where seasonal produce like roselle flowers and kaffir lime leaves are grown and used in the menu.
